Easy Choc. Chip Bars & Black and White Brownies



    With the holidays nearing, time to start thinking about some of that baking you will need to do.  Also, there will be a ton of parties, neighbors and friends that you will need to give a gift to and I love to do it with baked goods.  This is when I pull out two of my favorites that everyone loves and both are so easy and quick.


    Instead of cookies which take a lot of time, (you know, all those cookie sheets at 10-12 minutes each) I like to make chocolate chip bars. 

    My recipe is super easy and is one of those dump recipes.  (Everything goes in the bowl at once)

    2 1/2 c. flour
    1 c. brown sugar - packed
    1 c. softened butter
    1/2 c. gran. sugar
    2 lg. eggs
    2 tsp. vanilla extract
    1 tsp baking soda
    1 tsp salt

    Put all in a large mixing bowl and beat on medium high until well mixed.

    Stir in 1 pkg. choc chips and 1 c. chopped walnuts (optional)

    Preheat oven to 375, lightly grease bottom only of 9 x 13 pyrex baking dish

    Spread dough evenly in baking dish and bake approx. 30-35 minutes. Don't overbake.  As soon as center is set, remove from oven, they should shrink a little as they cool.  Bars will be soft and gooey like soft baked cookies.  Cool completely, cut into bars and cover with saran.  Can be placed in single layers in freezer bag and stored in fridge for several weeks.    So good and guaranteed to disappear instantly.


    The next one looks amazing and is the easiest of all:
    Black and White Brownies

    (Sorry, I didn't bake these this time, but wanted to include the recipe.  They really do look just like the pic and they are absolutely delicious. )

    l pkg. Fudge Brownie Mix
    1 pkg. white baking pieces
    1 c. semisweet chocolate pieces
    1/2 c. chopped pecans
    1/4 c. melted butter
    3 tblsp. hot water
    2 c. sifted powdered sugar
    1/4 c. cocoa powder
    1 tsp. vanilla
    3/4 c. pecan pieces

    Preheat oven to 350 and grease bottom only of 9 x 13 baking pan.
    Prepare brownie mix according to directions, then stir in half of the white chocolate pieces, all of the chocolate pieces and the 1/2 c. pecan pieces.  Spread evenly in baking pan.

    Bake approx. 30 minutes or until center is set.  Sprinkle with the remaining white baking pieces and then return to over for 1 minute more.  Remove pan to wire rack to cool.

    Frosting
    In a small bowl combine melted butter, hot water, powdered sugar, cocoa powder and vanilla.  Stir by hand until smooth.  Spoon over top of brownies.  Sprinkle with 3/4 c. pecan pieces.  Let cool 1 1/2 hrs. or until frosting is set.  Cut into bars. 

    Just like the chocolate chip bars, these can be stored for several weeks in fridge.

    Both are tested winners and fabulous for dessert and for gifts.  Enjoy.
